Here’s an interesting and healthy salad.
Ingredients:
- 2-3 medium leeks, sliced
- 1 package of mixed frozen vegetables that are available– cook it
- 10.5 oz (300 g) sweet corn – cook it
- 20 dried plums (prunes) – briefly boil in water and chop
- 8 oz (250 g) mushrooms of choice – chop and sauté
- 2-3 bell peppers – finely chopped
- 12 small pickled cucumbers – finely chopped
Dressing:
- ¾ cup (180 ml) olive oil
- 3 tbsp apple cider vinegar
- 1 tbsp mustard
- 1 tbsp honey (it’s not noticeable in taste, just adds a nice shine to the salad)
- Salt to taste
Instructions:
- Boil the mixed frozen vegetables and sweet corn until tender.
- Boil the dried plums briefly in water, then chop them.
- Sauté the mushrooms until soft.
- Chop the leeks, bell peppers, and pickled cucumbers.
- In a large bowl, combine all the ingredients.
- For the dressing, whisk together the olive oil, apple cider vinegar, mustard, honey, and salt.
- Pour the dressing over the salad and mix well.
