- 2 packets unflavored gelatin (about 0.5 ounces total)
- 2 teaspoons vanilla sugar or 1 teaspoon vanilla extract
- 3 tablespoons rum
- 2 tablespoons powdered sugar
Ingredients for the White Chocolate Cream
Use the same ingredients as the dark chocolate cream, but replace the dark chocolate with:
- 7 ounces white chocolate
Instructions
Sponge
- Preheat the oven to 400°F.
- Line an 11-inch round cake pan with parchment paper.
- In a large bowl, sift together flour, cocoa powder, baking powder, and salt.
- Add yogurt, sugar, milk, and vanilla extract. Mix until combined.
- Slowly pour in the oil while mixing until the batter becomes smooth.
- Pour the batter into the prepared pan.
- Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the sponge to cool completely.
Dark and White Chocolate Cream
- Gently heat the milk with vanilla and rum. Do not allow it to boil.
- In a separate bowl, beat the egg yolks with sugar until pale and creamy.
- Slowly whisk the egg mixture into the warm milk.
- Cook over low heat for 8 to 10 minutes, stirring constantly, until slightly thickened. The mixture will remain pourable.
- Let the custard cool completely.
- Melt the chocolate and allow it to cool slightly.
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Fold the cooled custard into the whipped cream.
- Add the melted chocolate and mix gently until smooth.
- Prepare the gelatin according to package directions and mix it into the cream until fully incorporated.
Repeat the same process for the white chocolate cream.
Assembling the Cake
- Place the cooled sponge back into the cake pan or cake ring.
- Spread the white chocolate cream evenly over the sponge.
- Carefully spread the dark chocolate cream over the white layer.
- Refrigerate for at least 4 hours, preferably overnight, until fully set.
Decoration
To make chocolate shavings, spread melted chocolate thinly on a flat surface. Refrigerate until firm, then scrape with a spatula or knife to create curls. Decorate the top of the cake with the chocolate shavings.
Helpful Tips
- Avoid touching chocolate shavings with your fingers, as body heat will melt them.
- For softer, creamier layers use instant gelatin.
- For firmer, mousse-like layers use sheet gelatin or bloomed powdered gelatin.
