Chicken and Vegetable Casserole is a simple and healthy dish that’s easy to make. It combines tender chicken, fresh zucchini, mushrooms, and flavorful spices.

Ingredients

  • 2 chicken fillets (1 chicken breast)
  • 1 medium zucchini
  • A few medium-sized mushrooms
  • 1 small onion
  • 2 garlic cloves
  • 2 eggs
  • 2 tablespoons low-fat cheese
  • Olive oil
  • Basil
  • Thyme
  • Chili powder
  • A pinch of salt

Preparation

  1. Sauté the onion and garlic in a little olive oil. Add the chicken cut into small cubes.
  2. Once the chicken is lightly browned, add the mushrooms, zucchini, and seasonings. Mix well.
  3. Transfer the mixture to a heatproof dish and pour over a mixture of low-fat cheese and eggs.
  4. Bake at 180°C (350°F) for about 20 minutes.
