Chicken and Vegetable Casserole is a simple and healthy dish that’s easy to make. It combines tender chicken, fresh zucchini, mushrooms, and flavorful spices.
Ingredients
- 2 chicken fillets (1 chicken breast)
- 1 medium zucchini
- A few medium-sized mushrooms
- 1 small onion
- 2 garlic cloves
- 2 eggs
- 2 tablespoons low-fat cheese
- Olive oil
- Basil
- Thyme
- Chili powder
- A pinch of salt
Preparation
- Sauté the onion and garlic in a little olive oil. Add the chicken cut into small cubes.
- Once the chicken is lightly browned, add the mushrooms, zucchini, and seasonings. Mix well.
- Transfer the mixture to a heatproof dish and pour over a mixture of low-fat cheese and eggs.
- Bake at 180°C (350°F) for about 20 minutes.
