Chicken with Peanuts Ingredients:

350g chicken breast,

1 teaspoon of ground red pepper,

50g peanuts,

1 small chili pepper,

2 small leeks,

2 teaspoons of cornstarch,

3 tablespoons of soy sauce,

2 garlic cloves,

1/2 dl white wine.

Optional: a little grated ginger (I personally don’t add it because I don’t like ginger, but if you do, feel free to add it).

Instructions:

  1. Cut the chicken into 1.5 cm cubes, sprinkle with red pepper and one teaspoon of cornstarch, and mix well.
  2. Slice the leek into rings (white part) and cut the green part into smaller pieces.
  3. Heat 2 tablespoons of oil in a non-stick pan (a wok is ideal, but you can use any pan). Add the peanuts and quickly fry them (do not let them burn, as they will become bitter). Remove the peanuts from the pan.
  4. In the same pan, add the chicken and cook until the cubes turn white. Then add the leek and crumbled chili pepper. Stir-fry for a few minutes, then return the peanuts to the pan.
  5. In a separate bowl, mix cornstarch, soy sauce, chopped garlic, and white wine (and ginger, if using). Pour this mixture over the chicken.
  6. Let everything cook for a few more minutes until it thickens slightly. If needed, add salt (I find the soy sauce is salty enough).

Serve with a green or mixed salad and steamed rice.
