Start your day with these wholesome Carrot Muffins—soft, moist, and naturally sweetened with apples and a hint of spice.
Ingredients (makes 12 muffins):
- 1 3/4 cups all-purpose flour
- 1/2 cup oat flour (or finely ground oats)
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 3/4 cup coconut sugar (or brown sugar)
- 1 1/2 cups finely grated carrots
- 1/2 cup grated apple
- 1/4 cup chopped walnuts or pecans (optional)
- 2 large eggs
- 1/3 cup melted coconut oil or vegetable oil
- 1/2 cup unsweetened applesauce
- 1 tsp vanilla extract
Instructions:
Cool in the pan for 5 minutes, then transfer to a wire rack. Optional: drizzle with a light maple glaze or sprinkle with extra cinnamon sugar.
Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners or grease lightly.
In a large bowl, combine flours, baking powder, baking soda, cinnamon, ginger, salt, and sugar. Stir well.
Fold in the grated carrots, apple, and nuts (if using).
In another bowl, whisk together eggs, oil, applesauce, and vanilla.
Gently mix wet ingredients into dry ingredients until just combined; do not overmix.
Divide batter evenly among muffin cups, filling each about 3/4 full.
Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.
