This version of Caesar salad is simple to make and full of fresh flavors. It’s a perfect option for a quick lunch or a light dinner, offering a delightful balance of textures and tastes. The recipe combines juicy roasted chicken, crunchy rye bread croutons, and crisp lettuce or Chinese cabbage, all tied together with a tangy homemade dressing.
Ingredients:
500g chicken fillet
Roast in the oven, cool, and slice.
2 tsp olive oil
1 tsp grated plant-based cheese (or Parmesan)
1 tsp mayonnaise (optional, but it doesn’t detract from the flavor)
1 tsp lemon juice
1 tbsp mustard
1 clove of garlic, finely chopped or crushed
Salt and pepper to taste
Mix all the dressing ingredients in a small bowl (or jar) and shake well to combine into a uniform mixture.
Optional: Fry 2 slices of bacon or ham without oil and cut into small squares (~1 cm). This ingredient was omitted in this recipe.
Toast 2 slices of rye bread (brushed with olive oil) in the oven and cut into 1 cm cubes.
Wash half a head of Chinese cabbage or green lettuce and chop the leaves into bite-sized pieces.
Combine the roasted chicken, bread, lettuce, and dressing, and mix well.
