Ingredients
For the Pizza Dough
- 2.2 pounds prepared pizza dough (enough for two 14–16-inch pizzas), homemade or store-bought
For the Topping
- 4 to 5 smoked mackerel or other smoked fish, cleaned and flaked
- 1¼ pounds onions, finely chopped
- 2 to 3 garlic bulbs, minced
- 7 ounces anchovy fillets
- 7 ounces olives, finely chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1 teaspoon black pepper
- 2 to 3 tablespoons olive oil
For Serving (Optional)
- Mustard
- Mayonnaise
- Garlic sauce
Instructions
- Preheat your oven to 475°F. If using a pizza stone, place it in the oven while it preheats.
- Clean the smoked fish thoroughly, removing the head, tail, skin, and all bones. Flake the fish into small pieces.
- Finely chop the onions, mince the garlic, and chop the olives.
- In a large bowl, combine the smoked fish, onions, garlic, olives, basil, oregano, rosemary, and black pepper.
- Divide the dough into two equal portions and roll each into a 14 to 16-inch round or rectangle. Place on pizza pans or baking sheets.
- Fold or pinch the edges slightly to create a raised crust.
- Evenly spread the fish mixture over the dough.
- Arrange the anchovy fillets across the top.
- Bake for 15 to 20 minutes, or until the crust begins to brown and the onions have softened.
- Remove the pizzas briefly, drizzle with the olive oil, and return to the oven for another 2 to 3 minutes, if desired, to finish baking.
- Slice and serve warm with mustard, mayonnaise, or garlic sauce on the side.
