Berbere is a Ethiopian spice blend known for its rich, warming flavors and fiery kick. Perfect for stews, roasted meats, and vegetable dishes, this homemade mix brings authentic Ethiopian cuisine straight to your kitchen. Toasted spices combined with aromatic herbs and chilies create a complex, deeply flavorful seasoning that transforms any dish.

Ingredients:

2 tsp cumin seeds

3 whole cloves

½ tsp black cardamom seeds

½ tsp black peppercorns

¼ tsp allspice berries

1 tsp fenugreek seeds

½ tsp coriander seeds

8–10 dried red chilies, stems removed

½ tsp fresh grated ginger (or dried ground ginger)

¼ tsp ground turmeric

1 tsp sea salt

2 tbsp sweet paprika (Hungarian or Spanish)

¼ tsp ground cinnamon

¼ tsp ground nutmeg

Instructions:

Place cumin, cloves, cardamom, peppercorns, allspice, fenugreek, and coriander in a small dry pan. Toast gently over low heat for about 2 minutes, stirring often, until fragrant. Remove from heat and allow to cool slightly.

Using a spice grinder or mortar and pestle, grind the toasted spices together with the dried chilies until fine.

Mix in ginger, turmeric, salt, paprika, cinnamon, and nutmeg. Stir well to combine.

Transfer to a clean, airtight glass jar. Store in the refrigerator for up to 6 months to maintain freshness.
