Beef is delicious in many ways, and it goes well with saffron, especially when accompanied by delicious sauteed vegetables and cream sauce with homemade gnocchi.
Beef steaks in saffron basic ingredients for two people:
- 2 medium-sized beef steaks
- butter
- a pinch of saffron
- a pinch of ground cumin
- a few leaves of fresh rosemary
- a pinch of ground sweet red pepper
- half a lemon
- 1 cooking cream
- 1 head of red onion chopped into thin strips
- 2 cloves of finely chopped garlic
- half a handful of finely chopped parsley
- salt and pepper as desired
- olive oil
- sharp flour for breading meat
- a small head of broccoli
- half a head of cauliflower
- 1 carrot chopped into cubes
- a few cubes of chopped celery
Beat the beef steaks and separate them.
Blanch the cauliflower, broccoli, carrots and celery in a bowl of boiling water, drain and separate.
Roll the steaks in flour, salt and pepper.
Put the red onion in a pan with butter and a little oil, then when it relaxes a little, add the garlic and when it smells, put the schnitzels and fry them on both sides with the addition of rosemary and a couple of drops of lemon juice.
Add a little water and continue to simmer over low heat.
Add saffron, cumin, red pepper and parsley.
Season with salt and pepper and simmer until the meat is soft.
At the same time, while the meat is still stewing in a non-stick pan, saute the drained vegetables, add a little lemon juice and salt. Take it apart
Remove the meat and set aside
In the same container where the meat was stewed, add the cooking cream and let it simmer a little. Serve
Try to time it so that your vegetables and meat are ready at the same time. Serve gnocchi with this dish or as desired. Pour sour cream over meat and vegetables.
