One of the best ways to elevate a simple steak is with a rich, creamy Peppercorn Sauce. This sauce combines the sharp kick of cracked peppercorns with the smoothness of cream and a splash of brandy or cognac for depth. Made quickly in just minutes using beef stock, it’s perfect for turning an everyday steak dinner into something special.

Ingredients:

12 oz beef steak

¼ cup cooking cream (heavy cream)

3 tablespoons whole peppercorns

3 tablespoons white wine

2 teaspoons butter

Juice of ½ lemon

Salt and pepper to taste

12 oz beef steak

¼ cup cooking cream (heavy cream)

3 tablespoons whole peppercorns

3 tablespoons white wine

2 teaspoons butter

Juice of ½ lemon

Salt and pepper to taste

Season the steak with salt, then sear it in a hot skillet with a little oil on all sides until nicely browned. Remove the steak from the skillet and set aside.

In the same skillet, add the white wine and whole peppercorns, and cook until most of the liquid evaporates.

In a separate bowl, mix the butter with the cream, then add it to the skillet. Add the lemon juice and season with salt and pepper. Pour the sauce over the steak and serve while hot.
