Ingredients
For the seasoning mix (enough for 4 chicken breasts):
- 1/8–1/4 tsp cayenne pepper (adjust for heat preference)
- 1–2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 3/4 tsp crumbled chicken bouillon cube
- 1/4 tsp dried sage
- 1/4 tsp ground cumin
- Up to 1 tsp brown sugar
- 1 tbsp cornstarch
For the fajitas:
- 4 skinless, boneless chicken breasts, sliced into thin strips
- 1 large green bell pepper, cut into strips
- 1 medium onion, thinly sliced
- 2 tbsp vegetable oil
- 1/3 cup water
- 6–8 small flour tortillas, warmed
- Pickled jalapenos, optional, for serving
Instructions
Combine all the seasoning ingredients in a small bowl and mix thoroughly.
Heat oil in a large skillet over medium-high heat. Add the chicken strips and cook, stirring frequently, for about 5 minutes until they start to brown.
Sprinkle the homemade spice mix over the chicken, add water, bell pepper strips, and sliced onion. Reduce heat to medium and cook, stirring occasionally, for another 10 minutes, or until the chicken is cooked through and the vegetables are tender but still slightly crisp.
Warm the tortillas in the microwave for 1 minute on a plate covered with a damp paper towel or cloth.
Serve the chicken mixture on the warm tortillas, roll them up, and enjoy with pickled jalapenos or your favorite toppings.
