Cheesy broccoli and cauliflower bake is a healthy and delicious dish that works wonderfully as a side or a main meal. Ingredients:
- 9 oz broccoli florets
- 9 oz cauliflower florets
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
- 3.5 oz cheddar cheese, grated
- 1.75 oz Parmesan cheese, grated
- 1/2 teaspoon onion powder
- 1/4 teaspoon nutmeg (optional)
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 1 tablespoon olive oil
Instructions:
- Preheat the oven to 400°F (200°C).
- Bring a large pot of salted water to a boil. Add the broccoli and cauliflower florets, cooking for 3–4 minutes until just tender. Drain well and transfer to a greased baking dish.
For the cheese sauce:
- In a saucepan over medium heat, melt the butter. Stir in the flour and cook for 1 minute to form a roux.
- Gradually add the milk, whisking constantly until the sauce thickens.
- Stir in the onion powder, nutmeg (if using), salt, and pepper. Add the cheddar and Parmesan cheeses, mixing until fully melted and smooth.
- Pour the cheese sauce over the broccoli and cauliflower, gently tossing to coat the vegetables evenly.
For the topping:
- In a small bowl, mix the breadcrumbs with olive oil. Sprinkle the breadcrumb mixture evenly over the casserole.
- Bake in the preheated oven for 20–25 minutes, or until the top is golden and bubbly.
- Let the dish cool for a few minutes before serving. Optionally, garnish with fresh parsley.
