Made with spinach, carrots, rice, and a creamy egg topping, Vegetarian Moussaka it’s a delicious and wholesome bake that’s easy to prepare. Perfect for a meatless lunch or dinner, it’s hearty, comforting, and full of flavor.

Ingredients:

  • ¾ cup uncooked white rice (about 150 grams)
  • 1 lb fresh spinach (about 500 grams)
  • 1 large leek or 1 yellow onion
  • 2 medium carrots
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 2 large eggs
  • ¾ cup sour cream (about 6.5 fl oz / 200 ml)

Instructions:

  1. Cook the rice in salted water and drain.
  2. Boil the spinach and carrots separately until tender, then drain well.
  3. Dice the spinach and carrots into small pieces.
  4. In a pan, heat the oil and sauté the chopped leek or onion until soft. Add the spinach and carrots, season with salt and pepper, and cook for a few minutes until combined.
  5. Grease a baking dish. Layer the cooked rice on the bottom, then top with the spinach mixture.
  6. In a bowl, whisk the eggs with the sour cream. Pour evenly over the layered vegetables.
  7. Bake in a preheated oven at 400°F (200°C) for about 30 minutes, until set and golden on top.
  8. Let cool slightly before serving.
