Made with spinach, carrots, rice, and a creamy egg topping, Vegetarian Moussaka it’s a delicious and wholesome bake that’s easy to prepare. Perfect for a meatless lunch or dinner, it’s hearty, comforting, and full of flavor.
Ingredients:
- ¾ cup uncooked white rice (about 150 grams)
- 1 lb fresh spinach (about 500 grams)
- 1 large leek or 1 yellow onion
- 2 medium carrots
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 2 large eggs
- ¾ cup sour cream (about 6.5 fl oz / 200 ml)
Instructions:
- Cook the rice in salted water and drain.
- Boil the spinach and carrots separately until tender, then drain well.
- Dice the spinach and carrots into small pieces.
- In a pan, heat the oil and sauté the chopped leek or onion until soft. Add the spinach and carrots, season with salt and pepper, and cook for a few minutes until combined.
- Grease a baking dish. Layer the cooked rice on the bottom, then top with the spinach mixture.
- In a bowl, whisk the eggs with the sour cream. Pour evenly over the layered vegetables.
- Bake in a preheated oven at 400°F (200°C) for about 30 minutes, until set and golden on top.
- Let cool slightly before serving.
