When you don’t know what to prepare for dinner, these two simple and light recipes are the perfect solution.

Leek Soup:
Slice the leek and sauté it in olive oil over low heat. Add grated smaller potato and sauté for about 10 minutes. Pour in enough water to cover the ingredients and cook over low heat for about 20 minutes. Remove from the stove and blend until smooth. Add milk, salt, pepper, lemon juice, and parsley.

Salad with Roasted Pears:

  • 1 teaspoon butter
  • 1 pear
  • 1 tablespoon honey
  • Arugula (or spinach or chard)
  • Walnuts
  • Plant-based cheese
  • Balsamic vinegar
  • Pepper

Coat a baking dish with butter. Peel and slice the pear, then roast in a preheated oven at 200°C for 20 minutes. Drizzle the pears with honey and bake for another 10 minutes, turning them halfway through. Be careful not to let the honey caramelize too much, as it can harden and become bitter.

Chop the arugula (or chard) and lightly sauté it in the pear juice. Remove from the stove and add a splash of balsamic vinegar. Toss in the chopped walnuts, cheese cubes, and roasted pears, then add a little pepper. This is a great option for a light dinner!
