ROLL WITH IT — The dessert world is going spiral this season, and home bakers are trading layer cakes for something far more dramatic. From the sun-drenched Adriatic coast comes a no-bake tropical sensation that chills in the fridge while you relax. Meanwhile, a whimsical patterned sponge cake—nicknamed the “Giraffe” for its wild spotted swirl—is stopping scrolls and stealing the spotlight at dinner tables everywhere. Whether you need a quick 25-minute fix or a weekend baking project that doubles as edible art, these two rolls prove that the best things really do come in circular form. Grab a towel, prep your pan, and prepare to roll.
Recipe 1: Tropical No-Bake Roll
Yields: 30 slices
Prep Time: 25 minutes
Total Energy: ~2,150 kcal (9,000 kJ)
Ingredients:
- 3 cups whole milk
- 3 tbsp semolina
- 1½ tbsp granulated sugar
- 2 ripe bananas, sliced
- 3 tbsp ground walnuts
- 2 tbsp honey
- 1½ cups ground biscuits (sweet tea biscuits)
- ¼ cup margarine (or unsalted butter), softened
- ¼ cup shredded coconut
- 2 oz melted dark chocolate
- 2 cups whole biscuits, finely crushed for coating
Instructions:
- In a saucepan, cook the semolina pudding according to package directions using the milk and sugar.
- While the pudding is still warm, fold in the ground biscuits, shredded coconut, and margarine until fully combined.
- Divide the mixture evenly into two bowls. Stir the melted dark chocolate into one half.
- Sprinkle your work surface generously with crushed biscuit crumbs.
- Spread the plain (light) mixture into a flat rectangle about ½-inch thick.
- Spread the chocolate mixture evenly over the top.
- Arrange banana slices across the surface, then roll everything up tightly into a log.
- Roll the outside in more crushed biscuits if desired. Refrigerate for at least 2 hours before slicing and serving.

Recipe 2: Giraffe Roll
Ingredients:
- 5 large eggs, separated
- 1 cup granulated sugar, divided
- 1 cup all-purpose flour
- 3–4 tbsp unsweetened cocoa powder
- 1 can (14 oz) dulce de leche (cooked sweetened condensed milk)
- Pinch of salt
Instructions:
- Preheat your oven to 350°F (180°C). Line a small jelly roll pan (about 8×12 inches) with parchment paper.
- On a separate sheet of parchment, draw a simple giraffe pattern using thick pencil lines. Place this drawing face-down on the pan, then lay a clean sheet of greased parchment on top.
- Beat the egg yolks with ½ cup sugar until thick and pale.
- In a clean bowl, whip the egg whites with a pinch of salt until stiff peaks form. Gradually add the remaining ½ cup sugar.
- Gently fold the yolk mixture into the whipped whites.
- Sift the flour over the batter and fold in carefully.
- Transfer some of the plain batter into a piping bag. Pipe it directly onto the parchment following your giraffe lines.
- Bake the pattern for 2–3 minutes until just set.
- Meanwhile, sift the cocoa powder into the remaining batter and fold gently.
- Remove the pan from the oven. Quickly spread the chocolate batter over the entire surface and smooth it out.
- Return to the oven and bake for 18–20 minutes, until the sponge springs back when touched.
- Immediately invert the hot cake onto a clean kitchen towel. Peel off the parchment to reveal the pattern.
- Flip the cake so the pattern faces down, spread generously with dulce de leche, and roll it up tightly using the towel.
- Let cool completely, seam-side down, before slicing.
