Delicious oven-baked tulumbe made without deep frying! This easy Balkan dessert features a golden choux-style pastry soaked in sweet syrup—crispy on the outside, soft inside.
Ingredients:
- 1 2/3 cups water (400 ml)
- 2/3 cup vegetable oil (150 ml)
- 2 1/2 cups all-purpose flour (300 g)
- 1 teaspoon baking powder
- 5 large eggs
For the Syrup:
- 3 cups sugar (600 g)
- 2 cups water (500 ml)
Instructions:
In a saucepan, bring the water and oil to a boil. Stir in the flour and baking powder all at once and mix until a thick dough forms. Let the mixture cool slightly.
Add the beaten eggs to the dough and mix very well until the batter is smooth and lump-free. This may take a few minutes of vigorous mixing.
Transfer the dough into a piping bag with a star-shaped tip. Pipe the tulumbe shapes directly onto a lightly greased baking sheet.
Bake in a preheated oven at 400°F (200°C) for about 15 minutes, or until golden brown.
Meanwhile, prepare the syrup by combining the sugar and water in a saucepan. Heat until the sugar dissolves and the syrup thickens slightly.
Pour the hot syrup over the hot tulumbe immediately after baking. Let them soak until fully saturated.
