A hearty, spice-filled soup perfect for the festive table of Imbolc or simply a warming dish for a cold winter evening.
Ingredients:
- 3 tablespoons butter
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 2 celery roots (or 2 stalks of celery), diced
- 3 carrots, diced
- 1.5 tablespoons curry powder
- 2 tablespoons all-purpose flour
- 5 cups chicken broth
- 2 tablespoons long-grain white rice
- 2 tomatoes, chopped
- 8.5 oz (240 g) cooked chicken, diced
- 1 small apple, cooked, peeled, and chopped
- Salt to taste
- Fresh celery leaves for garnish
Instructions:
- In a large pot, heat the butter and vegetable oil. Add the onion, celery, and carrots. Sauté for about 5 minutes until softened.
- Stir in the curry powder and flour and cook for another minute to release the flavors.
- Add the chicken broth, stir, and bring to a boil.
- Once boiling, add the rice. Cover and simmer on low heat for about 20 minutes, stirring occasionally.
- Add the tomatoes, chicken, and apple, and season with salt. Cover and simmer for another 15 minutes.
- Remove from heat, serve hot, and garnish with fresh celery leaves.
