A hearty, spice-filled soup perfect for the festive table of Imbolc or simply a warming dish for a cold winter evening.

Ingredients:

  • 3 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 2 celery roots (or 2 stalks of celery), diced
  • 3 carrots, diced
  • 1.5 tablespoons curry powder
  • 2 tablespoons all-purpose flour
  • 5 cups chicken broth
  • 2 tablespoons long-grain white rice
  • 2 tomatoes, chopped
  • 8.5 oz (240 g) cooked chicken, diced
  • 1 small apple, cooked, peeled, and chopped
  • Salt to taste
  • Fresh celery leaves for garnish

Instructions:

  1. In a large pot, heat the butter and vegetable oil. Add the onion, celery, and carrots. Sauté for about 5 minutes until softened.
  2. Stir in the curry powder and flour and cook for another minute to release the flavors.
  3. Add the chicken broth, stir, and bring to a boil.
  4. Once boiling, add the rice. Cover and simmer on low heat for about 20 minutes, stirring occasionally.
  5. Add the tomatoes, chicken, and apple, and season with salt. Cover and simmer for another 15 minutes.
  6. Remove from heat, serve hot, and garnish with fresh celery leaves.

This soup is rich, flavorful, and perfect for the winter season, whether you’re celebrating Imbolc or simply enjoying a cozy meal.
