Russian Cake: The No-Bake Classic You Need to Try!
A symphony of flavors, textures, and nostalgia, this no-bake Russian Cake is a masterpiece of layered ladyfingers soaked in coffee and rum, with a luscious buttercream filling and a touch of tangy marmalade. Serve it chilled for the ultimate dessert experience.

Ingredients:

  • 1 package ladyfingers
  • ½ cup milk
  • 3-4 tablespoons rum
  • ½ cup strong black coffee (warm)
  • 3.5 oz butter (softened)
  • 2 large eggs
  • 3.5 oz granulated sugar
  • Zest of 1 lemon
  • ½ cup tangy marmalade
  • 1.75 oz powdered sugar

Instructions:

  1. Divide the ladyfingers into four portions. Mix warm milk with rum and quickly dip one portion of ladyfingers into the mixture. Arrange them in a porcelain or glass dish.
  2. Dip the second portion of ladyfingers in warm coffee and layer them crosswise over the first layer.
  3. Cream the butter with egg yolks, granulated sugar, and lemon zest until fluffy. Spread this mixture over the arranged ladyfingers.
  4. Dip the third portion of ladyfingers in coffee and layer over the buttercream. Finally, layer the last portion of ladyfingers dipped in coffee crosswise on top.
  5. Beat egg whites to stiff peaks, gradually adding powdered sugar. Scoop 5-6 meringue dollops onto the top layer and add a small spoonful of marmalade to each dollop.
  6. Refrigerate the cake for several hours before serving for the best flavor and texture.
