Russian Cake: The No-Bake Classic You Need to Try!
A symphony of flavors, textures, and nostalgia, this no-bake Russian Cake is a masterpiece of layered ladyfingers soaked in coffee and rum, with a luscious buttercream filling and a touch of tangy marmalade. Serve it chilled for the ultimate dessert experience.
Ingredients:
- 1 package ladyfingers
- ½ cup milk
- 3-4 tablespoons rum
- ½ cup strong black coffee (warm)
- 3.5 oz butter (softened)
- 2 large eggs
- 3.5 oz granulated sugar
- Zest of 1 lemon
- ½ cup tangy marmalade
- 1.75 oz powdered sugar
Instructions:
- Divide the ladyfingers into four portions. Mix warm milk with rum and quickly dip one portion of ladyfingers into the mixture. Arrange them in a porcelain or glass dish.
- Dip the second portion of ladyfingers in warm coffee and layer them crosswise over the first layer.
- Cream the butter with egg yolks, granulated sugar, and lemon zest until fluffy. Spread this mixture over the arranged ladyfingers.
- Dip the third portion of ladyfingers in coffee and layer over the buttercream. Finally, layer the last portion of ladyfingers dipped in coffee crosswise on top.
- Beat egg whites to stiff peaks, gradually adding powdered sugar. Scoop 5-6 meringue dollops onto the top layer and add a small spoonful of marmalade to each dollop.
- Refrigerate the cake for several hours before serving for the best flavor and texture.
