Summer is the perfect time for light and refreshing meals, and nothing beats a bowl of homemade tomato soup. Bursting with flavor and ready in no time, this simple recipe is ideal for warm days when you want something comforting but not too heavy.
Ingredients:
1 medium yellow onion, chopped
2 cups (500 ml) water
1 ¾ cups (about 14 oz) cooked or canned tomato purée or juice
1 teaspoon sugar
½ teaspoon ground paprika
1 tablespoon chopped fresh parsley
Salt, to taste
Black pepper, to taste
Preparation:
Sauté the chopped onion in a little oil or butter until translucent.
Add the ground paprika, then stir in the tomato juice or purée and water.
Season with salt and pepper.
Cook for 20 minutes.
If desired, add noodles of your choice during the last few minutes of cooking.
Finish by adding finely chopped parsley before serving.
