This light and fluffy cherry cake is a simple homemade treat that brings the flavor of summer to your table. Juicy cherries nestled into a soft vanilla sponge make it perfect for coffee breaks, picnics, or an effortless dessert.
Ingredients:
2 eggs
3/4 cup sugar
12 tablespoons vegetable oil (about 3/4 cup)
12 tablespoons milk (about 3/4 cup)
1 1/4 cups all-purpose flour (16 tablespoons)
2 teaspoons baking powder
1 packet vanilla sugar (or 1 teaspoon vanilla extract)
1 lb (about 500 g) cherries, pitted
Preparation:
Wash and pit the cherries.
Separate the eggs. Beat the yolks with sugar, oil, milk, flour, and baking powder until smooth.
In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the batter along with the vanilla sugar or extract.
Pour the mixture into a greased baking pan. Evenly spread the cherries over the top and press them in lightly.
Bake at 350°F (180°C) for about 30 minutes.
Cool, cut into squares, and serve.
