Ingredients for the Crust:

  • 1 1/4 cups sugar
  • 1/3 cup water
  • 1/2 cup margarine (or butter)
  • 3/4 cup crushed biscuits
  • 1/2 cup ground walnuts
  • 2 oz chocolate (chopped)

Filling:

  • 5 oz chestnut puree
  • 1/4 cup powdered sugar
  • 1/4 cup margarine (or butter)
  • 1/4 cup ground walnuts
  • 1 tablespoon rum

Glaze:

  • 3.5 oz chocolate
  • 2 tablespoons oil

Directions:

  1. Combine 1 1/4 cups sugar with 1/3 cup of water in a saucepan and bring to a boil. Let it cook for 3 minutes, then remove from heat.
  2. Add the margarine (or butter) to the hot syrup and stir until melted. Then add the crushed biscuits, ground walnuts, and chopped chocolate. Optionally, you can add 1 teaspoon of cocoa for a richer, darker color. Mix everything thoroughly and let it cool slightly. Spread the mixture over a sheet of foil to form a rectangle about 14×14 inches.
  3. Mix the chestnut puree, powdered sugar, margarine, ground walnuts, and rum. Fill a piping bag with the mixture and pipe it along the edge of the crust as a continuous line.
  4. Roll the crust and filling together, like a log, and refrigerate until firm.
  5. Melt the chocolate and oil in a small saucepan, stirring until smooth. Pour the glaze over the rolled pralines and let it set in the fridge.

Coconut Croissants
