Mushroom and Leek Stew
Ingredients:
- 7 oz mushrooms (about 1 ½ cups sliced)
- ¼ cup uncooked rice
- ¾ cup chopped yellow onion
- ¾ cup sliced leek
- 2 tablespoons oil
- Salt and black pepper to taste
- ¼ cup water (as needed)
Instructions:
Wash the mushrooms and cut them into quarters. Slice the leek into thin rounds and dice the onion.
In a skillet or saucepan, add oil, onion, leeks, mushrooms, and a small amount of water. Season with salt and cook over low heat, stirring occasionally, until softened.
Toward the end of cooking, stir in the rice and continue simmering until the rice becomes tender, adding a little more water if necessary. Remove from heat and sprinkle with black pepper.
Serve warm with breaded hake fillets and steamed broccoli for a balanced meal.
Spinach Patties
Ingredients:
- 1 pound fresh spinach (or frozen, thawed and drained)
- 1 ¼ cups uncooked rice
- Oil for frying
- 2–3 tablespoons all-purpose flour (plus extra for coating)
- 1 teaspoon seasoning blend
- 2 tablespoons finely chopped fresh parsley
- Salt and black pepper to taste
Instructions:
If using fresh spinach, rinse thoroughly and boil in salted water for a few minutes. Drain well and finely chop. (If using frozen spinach, simply thaw, drain, and lightly salt.)
Cook the rice in water with 1 teaspoon seasoning blend. Drain and allow it to dry slightly.
In a large bowl, combine spinach, rice, parsley, salt, pepper, and a few tablespoons of flour to help bind the mixture.
Shape into patties, coat lightly in flour, and fry in hot oil until golden brown on both sides.
Serve with cabbage salad or beet salad for a fresh contrast.
Zucchini with Corn and Creamy Polenta
Ingredients:
- 2 tablespoons olive oil
- 1 medium yellow onion, finely chopped
- 1 medium zucchini, diced
- 1 cup sweet corn kernels
- 2 medium tomatoes, peeled and chopped
- Salt and black pepper to taste
- ½ teaspoon seasoning blend
For the Polenta:
- 3 cups water
- 1 tablespoon butter
- ½ teaspoon salt
- 1 ½ cups cornmeal (polenta)
Instructions:
Heat olive oil in a skillet and sauté the chopped onion until translucent. Add diced zucchini and corn. Cook for about 5 minutes.
Add peeled, chopped tomatoes. Season with salt, pepper, and seasoning blend. Stir well and simmer for about 10 minutes until vegetables are tender.
Meanwhile, prepare the polenta. In a saucepan, bring water, butter, and salt to a boil. Gradually whisk in the cornmeal, stirring constantly to prevent lumps. Cook until thickened.
Pour the polenta into lightly greased molds or a dish. Let it set slightly, then transfer to serving plates. Top with the sautéed vegetables and serve warm.
