Savory Potato Pudding with Mushrooms

Ingredients:

  • 14 oz (400 g) potatoes
  • 3.5 oz (100 g) unsalted butter
  • 9 oz (250 g) mushrooms
  • 2 tbsp vegetable oil
  • 1 tbsp dried vegetable seasoning or bouillon powder
  • 1 bunch parsley, finely chopped
  • 4 eggs, separated
  • ⅓ cup bread crumbs
  • ½ cup milk
  • Salt and pepper to taste

Instructions:

  1. Boil potatoes in salted water, peel, and mash while still warm.
  2. Cut mushrooms into quarters and sauté in oil with dried seasoning and chopped parsley. Add pepper to taste.
  3. In a bowl, beat softened butter with the 4 egg yolks, then add mashed potatoes, milk-soaked breadcrumbs, mushrooms, salt, and pepper.
  4. Beat egg whites to stiff peaks and fold them in gently.
  5. Grease a pudding mold with butter and sprinkle with breadcrumbs. Pour in the mixture.
  6. Steam over boiling water for about 40 minutes or bake in a water bath at 350°F (175°C) until set.

  • 4 eggs

  • Salt to taste
  • Oil for frying
  • Additional breadcrumbs for coating

Instructions:

  1. Grate boiled, peeled potatoes.
  2. Add ham, cheese, egg, semolina (or breadcrumbs), parsley, and salt. Mix until combined.
  3. Shape into a log, then cut into small rounds.
  4. Coat lightly with breadcrumbs and fry in hot oil until golden.
  5. Serve hot with yogurt or sour cream.

Bulgarian Country-Style Potatoes

Ingredients:

  • 2 lbs (about 900 g) medium white potatoes
  • 2 tbsp all-purpose flour
  • 2 tbsp cornmeal or fine corn flour
  • 1 tsp paprika
  • 1 tsp dry vegetable seasoning or salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • Oil for frying

Instructions:

  1. Cut peeled potatoes into quarters or sixths, depending on size. Boil in salted water until just tender (not mushy).
  2. Mix flour, cornmeal, paprika, seasoning, pepper, and garlic powder in a bowl.
  3. Drain the potatoes and coat them while still warm in the dry mix.
  4. Fry in hot oil until crisp and golden.
