Did you know that besides classic zucchini dishes, zucchini can also be made into a delicious pie? This sweet zucchini pie is a wonderful way to enjoy the fresh flavor of zucchini in a unique and tasty dessert. Perfect for using fresh summer zucchinis, it’s simple to prepare and sure to impress!
Ingredients:
4 zucchinis (washed and grated, seeds removed)
About 1 pound phyllo dough (baklava-style sheets)
1 cup sugar + vanilla
7 tablespoons margarine or lard
½ cup breadcrumbs
¾ cup oil or lard
1 egg + ¾ cup heavy cream (for the topping)
Instructions:
- In a baking pan, lay 5 sheets of phyllo dough, brushing each with oil.
- Sprinkle 1 tablespoon of breadcrumbs evenly over the bottom.
- Add the grated zucchini and sprinkle 2 tablespoons of sugar on top.
- Repeat layering with 5 more sheets of phyllo dough, brushing each with oil.
- Continue layering the phyllo sheets one by one, brushing each with oil, until you use about 5 sheets on top.
- Cut the assembled pie into squares.
- Mix the egg, heavy cream, and 2 tablespoons sugar, then pour this mixture evenly over the pie.
- Bake for about 30 minutes at 400°F (200°C) until golden.
