Summer French Toast is perfect for warm days when you want something light yet flavorful. Filled with fresh mozzarella and juicy tomatoes, and seasoned with oregano, these crispy bread sandwiches are a burst of Mediterranean flavors.
Ingredients for 4 servings:
- 8 slices of bread
- 250g mozzarella cheese
- 4 small tomatoes
- 200ml milk
- 4 eggs
- Breadcrumbs and flour for breading
- 1 teaspoon oregano
- Salt, pepper, and oil for frying
Preparation:
Slice the mozzarella into pieces and place them on a paper towel to absorb excess moisture. Dice the tomatoes. Cut the bread slices into 8 equal rectangles. On 4 of the bread slices, evenly distribute the diced tomatoes and mozzarella pieces. Sprinkle with oregano, add a pinch of pepper, then cover with the remaining bread slices and press firmly.
Coat the edges of the sandwiches lightly with flour, then briefly dip them in a little water to seal the edges and prevent the filling from leaking during frying. Dip each sandwich quickly in milk to moisten, then coat in beaten eggs and finally in breadcrumbs. Fry in hot oil until golden brown, then place on paper towels to absorb excess oil. Season with salt and serve warm.
For a variation, you can use crispbread instead of traditional bread slices. The recipe has been tested several times, with one modification: I mix the milk directly into the beaten eggs for breading. Highly recommended!
