When you want to prepare something flavorful, tender, and filling, stuffed veal breast is the perfect choice. This dish combines juicy veal with a rich, savory stuffing made from bread, eggs, and aromatic herbs. Slowly roasted and basted in its own juices, the meat stays moist and delicious, making it a great option for a comforting family meal or a special occasion.
Ingredients:
- 2.2 lbs (1 kg) veal breast
- 1 onion
- 2 bread rolls
- 2 eggs
- 1 bunch of parsley
- ⅓ cup (3.4 fl oz / 1 dl) milk
- 1 oz (25 g) black pepper
- Salt, to taste
- ¾ cup (6.8 fl oz / 2 dl) oil
Preparation:
- Finely chop the onion and sauté it in oil until golden.
- Soak the bread rolls in milk, then squeeze out the excess liquid.
- In a bowl, mix the eggs, chopped parsley, salt, and black pepper. Add the soaked bread rolls and mix well to form the stuffing.
- Carefully stuff the veal breast with the mixture and sew it shut to prevent the filling from spilling out during baking.
- Place the stuffed meat in a baking dish, pour hot oil over it, and roast in the oven, occasionally basting it with its own juices.
- Serve warm.
