When you want to prepare something flavorful, tender, and filling, stuffed veal breast is the perfect choice. This dish combines juicy veal with a rich, savory stuffing made from bread, eggs, and aromatic herbs. Slowly roasted and basted in its own juices, the meat stays moist and delicious, making it a great option for a comforting family meal or a special occasion.

Ingredients:

  • 2.2 lbs (1 kg) veal breast
  • 1 onion
  • 2 bread rolls
  • 2 eggs
  • 1 bunch of parsley
  • ⅓ cup (3.4 fl oz / 1 dl) milk
  • 1 oz (25 g) black pepper
  • Salt, to taste
  • ¾ cup (6.8 fl oz / 2 dl) oil

Preparation:

  1. Finely chop the onion and sauté it in oil until golden.
  2. Soak the bread rolls in milk, then squeeze out the excess liquid.
  3. In a bowl, mix the eggs, chopped parsley, salt, and black pepper. Add the soaked bread rolls and mix well to form the stuffing.
  4. Carefully stuff the veal breast with the mixture and sew it shut to prevent the filling from spilling out during baking.
  5. Place the stuffed meat in a baking dish, pour hot oil over it, and roast in the oven, occasionally basting it with its own juices.
  6. Serve warm.
