Stuffed Potatoes ingredients:
6 medium-sized potatoes, 220g ground beef, ¼ cup finely chopped parsley, 1 small onion, finely chopped, 1 clove garlic, finely chopped, salt and pepper, 400g tomato sauce.
- In a large skillet, brown the ground beef until it turns a nice brown color. While the beef is cooking, peel the potatoes and hollow them out to remove the core.
- Add the chopped onion, garlic, and parsley to the meat in the skillet. Continue to cook on low heat until the onion softens. Remove from heat and allow the mixture to cool.
- Once the meat has cooled, fill the hollowed potatoes with the mixture. Place the potatoes upright in a wide baking dish.
- When all the potatoes are stuffed and arranged, pour the tomato sauce into the baking dish and add two cups of water, making sure the potatoes are halfway covered.
- Bake in the oven at 350°F (180°C) for 30 minutes. Season with salt and pepper.
- Serve immediately. This recipe serves 6 to 8 people, depending on the size of the potatoes.
