Star-shaped Lemon Cookies are a delightful treat perfect for any occasion. With a hint of vanilla and fresh lemon zest, these cookies are light, buttery, and just the right amount of sweet.
Ingredients for 40 pieces:
- 1 vanilla pod
- 1 lemon
- 250 grams of flour
- 50 grams of sugar
- 75 grams of powdered sugar
- 125 grams of butter
- 1 egg
- A pinch of salt
Instructions:
- Slice the vanilla pod lengthwise and scrape out the seeds.
- Wash the lemon with warm water, dry it with a towel, then grate the zest and squeeze the juice.
- Mix flour, sugar, butter (cut into cubes), egg, vanilla seeds, lemon zest, lemon juice, and a pinch of salt using a hand mixer until it forms dough.
- Shape the dough into a ball, wrap it in plastic wrap, and chill for about 60 minutes in the fridge.
- Preheat the oven to 175°C (350°F).
- Sprinkle flour on your work surface and roll out the dough. Use a star-shaped cookie cutter to cut out about 40 stars and place them on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes. Remove from the oven and let cool.
- Mix powdered sugar with a teaspoon of lemon juice. Brush the cookies with the mixture and allow them to dry.
