These traditional fig and walnut squares are a simple, elegant treat made with just a handful of ingredients. A rich filling of dried figs, ground walnuts, and sweet syrup is layered between two thin wafer sheets, creating a naturally sweet dessert with a lovely chewy texture and nutty flavor.

Because there is no baking involved, this recipe is easy to prepare ahead of time. Once pressed and chilled, the wafer layers hold together beautifully and can be cut into neat squares or diamond shapes.

Ingredients

  • 1 cup + 2 tablespoons granulated sugar
  • 9 ounces dried figs, stems removed
  • 2 ½ cups finely ground walnuts
  • 2 small wafer sheets (about 8 × 10 inches each)
  • ¾ cup water

Instructions

  1. Pour the water into a saucepan and add the sugar. Heat over medium heat, stirring until the sugar dissolves. Bring to a gentle boil and cook briefly until a light syrup forms.
  2. Finely grind the dried figs using a food processor or meat grinder.
  3. Add the ground figs and walnuts to the warm syrup. Stir thoroughly until everything is evenly combined and forms a thick, spreadable filling.
  4. Place one wafer sheet on a flat surface. While the filling is still warm, spread it evenly over the wafer, reaching all the edges.
  5. Cover with the second wafer sheet and gently press down.
  6. Place a flat board or another heavy, even object on top to keep the layers firmly together. Leave to cool completely and set.
  7. Cut into small squares or diamond-shaped pieces and serve.

Recipe Notes

  • If the filling seems too thick to spread, mix in a little warm water, one tablespoon at a time.
  • Let the dessert rest for several hours before cutting so the wafers and filling can settle.
  • Store the finished squares in an airtight container in a cool, dry place.
