Spring Gnocchi ingredients:

750 grams of potatoes,
120 grams of semolina,
spoon of sharp flour,
some garlic,
50 grams of grated parmesan,
3 egg yolks,
salt,
pepper.

Ingredients for the sauce:
juice and zest of half a lemon,
100 grams of butter.

Preparation:
Boil unpeeled potatoes, peel them and chop them through a strainer. Cut some garlic into strips. Mix semolina, flour, garlic, Parmesan cheese, egg yolk and spices to the potatoes and mix all the ingredients into a soft dough. Divide the potato dough into two to four parts. On a work surface sprinkled with flour, make rolls about two centimeters thick from each part. Cut them into pieces three centimeters long. Roll the gnocchi over a fork to make small grooves.
Finely grate the lemon peel and squeeze out the juice. In a suitable pan, heat the butter with the lemon zest and juice. Cook the gnocchi and as soon as they float to the surface, it means they are cooked. Put the drained gnocchi in the pan with the sauce and shake them a little and mix.
