Baked potatoes can be added to meat or fish dishes or can be a separate dish. This one from our recipe, filled with vegetable stuffing, is perfect for a light dinner. It will take you about 15 minutes to prepare the vegetables, i.e. chop them and fry them in vegetable oil. Then you just need to fill the potatoes with the filling and put them in the oven for about 60 minutes. Serve potatoes with any yogurt-based sauce, for example, garlic sauce.
Ingredients:

  • 10 potatoes
  • 3 peppers
  • 1 onion
  • 7 mushrooms
  • Grated cheese or mozzarella
  • A few thin slices of bacon or ham
  • A pinch of hot pepper powder
  • Chopped parsley
  • 2 spoons of oil

For the sauce:

  • A glass of cucumber
  • 1 clove of garlic
  • 1 tablespoon of lemon juice
  • Salt and pepper.

Wash the potatoes, hollow them out with a spoon and finely chop the pulp. Clean the vegetables and mushrooms and cut them into small cubes. Fry in vegetable oil with mashed potatoes, season with salt, pepper and paprika. Fill the potatoes and bake for 40 minutes at 190 degrees Celsius. Take the baked potatoes out of the oven and sprinkle with cheese. Place slices of bacon next to the cheese. Bake for another 10 minutes. Serve baked potatoes with yogurt sauce, sprinkle with bacon flakes and sprinkle with parsley.
