Sea Bass with Ginger and Green Onions recipe offers a harmonious blend of traditional flavors and contemporary twists. The tender sea bass is complemented by the aromatic zest of fresh ginger and the subtle sharpness of green onions, creating a dish that’s both refreshing and satisfying.

Ingredients:

  • 4 cleaned Cromaris sea bass (about 10.5 oz each)
  • 1 bunch green onions
  • 1.2-inch piece of fresh ginger
  • 4 tablespoons light soy sauce
  • 1/2 tablespoon sugar
  • 1 tablespoon olive oil
  • Sunflower oil for frying
  • Salt
  • 1/2 teaspoon brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • Freshly ground white pepper
  • 1 teaspoon sesame oil
  • 2 tablespoons rice wine or vermouth

Instructions:

  1. Prepare the Vegetables:
    • Slice the green onions into thin strips. First, slice the white part of the green onions, then the green part.
    • Peel the ginger and slice it into thin strips.
  2. Prepare the Sea Bass:
    • Season the sea bass with salt and place them on a tray. Sprinkle with the sliced green onions and ginger, then drizzle with a little soy sauce.
    • Place this smaller tray into a larger one filled with water. Cover with foil and place it in the oven at 400°F (200°C) for about 20 minutes.
  3. For the Noodles (or Rice):
    • Slice a bit of ginger, green onions, and a garlic clove.
    • Make a sauce mixture by combining rice wine (or vermouth), soy sauce, sesame oil, and brown sugar. Add a bit of chili pepper to taste.
    • Heat a wok and fry the green onions and ginger in sunflower oil for a few minutes. Add the cooked noodles to the wok and pour the prepared sauce over them. Add a bit of chicken stock and cook until the liquid evaporates. Sprinkle with chopped parsley.
  4. Finishing the Sea Bass:
    • Heat the olive oil and drizzle it over the cooked fish. Sprinkle with basil, or if you have it, use cilantro instead.
