Here’s a quick and nutritious meal I prepared for lunch today: veal liver with vegetables. Veal liver is rich in protein, offering around 150 kcal per 100 grams and packed with fat-soluble vitamins, especially A and D. It’s often overlooked in our diet, but with 20 grams of protein per 100 grams, it’s truly a nutritional treasure.
I sautéed 100 grams of liver in coconut oil on high heat for about 5 minutes, adding a touch of black pepper. Be careful not to overcook it, as it can become tough; make sure to choose only fresh liver (chicken or veal, whichever you prefer).
Then, I added canned Mexican vegetable mix (corn, peas, bell pepper) along with some purple onion.
And that’s it—a simple, delicious, and nutrient-rich lunch ready in less than 10 minutes. It’s around 400 kcal, making it an excellent option for those on a cutting or weight-loss plan.
