Ingredients (Serves 6)

  • 2 lb beef roast or trimmed beef slices
  • 1 large yellow onion, sliced
  • 2 medium red bell peppers, seeded and sliced
  • 4 garlic cloves, peeled and smashed
  • 2 tbsp olive oil
  • 3/4 cup dry red wine
  • 1 tsp kosher salt
  • 3/4 tsp black pepper
  • 1/4 tsp sugar (optional, balances acidity)
  • 2 bay leaves
  • 2 tbsp all‑purpose flour

Instructions

  1. Pat the beef dry. Lightly coat with flour, salt, and pepper.
  2. Heat 2 tbsp olive oil in a large skillet over medium‑high heat. Sear beef 2–3 minutes each side until browned. Remove and set aside.
  3. In the same pan, add sliced onion, red peppers, garlic, and sugar. Cook 6–8 minutes until softened and lightly caramelized.
  4. Pour in the 3/4 cup red wine, scrape up browned bits with a wooden spoon. Simmer 2 minutes.
  5. Place seared beef and sautéed veggies in a baking dish. Add bay leaves. Pour wine mixture over the top.
  6. Preheat oven to 400°F. Bake covered 10 minutes, reduce heat to 350°F, bake 20 minutes, then remove cover and bake 15 minutes more until beef is tender.
  7. Let rest 5 minutes. Serve with crusty bread or simple green salad.
