Ingredients (Serves 6)
- 2 lb beef roast or trimmed beef slices
- 1 large yellow onion, sliced
- 2 medium red bell peppers, seeded and sliced
- 4 garlic cloves, peeled and smashed
- 2 tbsp olive oil
- 3/4 cup dry red wine
- 1 tsp kosher salt
- 3/4 tsp black pepper
- 1/4 tsp sugar (optional, balances acidity)
- 2 bay leaves
- 2 tbsp all‑purpose flour
Instructions
- Pat the beef dry. Lightly coat with flour, salt, and pepper.
- Heat 2 tbsp olive oil in a large skillet over medium‑high heat. Sear beef 2–3 minutes each side until browned. Remove and set aside.
- In the same pan, add sliced onion, red peppers, garlic, and sugar. Cook 6–8 minutes until softened and lightly caramelized.
- Pour in the 3/4 cup red wine, scrape up browned bits with a wooden spoon. Simmer 2 minutes.
- Place seared beef and sautéed veggies in a baking dish. Add bay leaves. Pour wine mixture over the top.
