Citrus Chicken Salad with Grapefruit is the kind of dish that feels like a sunny afternoon on a plate. The balance of savory chicken, salty prosciutto, and tangy grapefruit makes every bite light yet deeply satisfying. Think of it as a sophisticated twist on classic chicken salad — refreshing enough, yet elegant enough for any dinner table.

Ingredients (serves 4)

1 ¾ lb chicken breast 1 small onion, peeled 2 whole cloves 1 celery stalk, cut into pieces 2 carrots, peeled and chopped 2 grapefruits, peeled and sliced 4 cups mixed green lettuce leaves 3.5 oz thinly sliced prosciutto ⅔ cup plain yogurt 1 Tbsp honey 4 Tbsp olive oil Salt and black pepper, to taste

Preparation

Bring a large pot of lightly salted water to a boil. Add the celery, onion with the cloves, and carrots. Add the chicken and simmer until fully cooked and tender. Remove from heat, lift the chicken from the pot, and let it cool slightly. Shred or slice the cooled chicken into thin strips. Arrange the lettuce and prosciutto on four plates, then layer the chicken on top. Add the grapefruit slices. In a small bowl, whisk together yogurt, honey, and olive oil. Season with salt and pepper to taste. Drizzle the dressing over the salad just before serving.
