Red Velvet Cream Bars with Berries are the kind of dessert that looks like a bakery masterpiece but tastes like homemade comfort. Layers of buttery biscuit crust, creamy cheese filling, and a glossy red fruit topping create a perfect balance of textures — smooth, rich, and just the right amount of tartness. Ingredients

10.5 oz tea biscuits, crushed 1 cup unsalted butter (divided) 1¼ cups sugar (divided) 1 packet vanilla sugar 8 large eggs, separated 28 oz farmers cheese (or ricotta) 21 oz cream cheese 1¼ cups lemon pudding (prepared or instant mix) 2 cups red currants or other seasonal berries 2 cups apple juice 2 packets fruit jelly (red or berry flavored)

Preparation

Combine the crushed biscuits with ⅔ cup melted butter. Press evenly into a 12×15-inch baking pan. Bake at 350°F (175°C) for about 50 minutes, then let cool. Whip the remaining butter with ¾ cup sugar and vanilla sugar until creamy. In another bowl, beat egg yolks with both cheeses and lemon pudding, then mix into the butter mixture. In a separate bowl, beat egg whites with ¼ cup sugar until stiff peaks form, and gently fold into the cheese mixture. Spread the cream over the cooled crust and smooth the top. Heat apple juice with ¼ cup sugar, add the jelly, and stir until dissolved. Let cool slightly. Arrange the berries on top of the cream layer, then pour the cooled jelly mixture over them. Chill thoroughly before cutting into squares.
