Ingredients (for 4 servings):
8 boneless chicken thighs (flattened into cutlets)
3.5 oz (100 g) thinly sliced bacon
2 sprigs fresh rosemary
1.8 oz (50 g / about 1/2 cup) grated Parmesan cheese
1/2 cup white wine
1 garlic clove, finely chopped
2 tbsp olive oil
Salt and black pepper, to taste
Preparation:
Finely chop the rosemary and mix it with grated Parmesan. Sprinkle this mixture over the inside of each chicken thigh. Roll up the thighs and wrap them with bacon slices, securing with toothpicks.
Sauté the chopped garlic in olive oil over medium heat. Add the chicken rolls and brown them lightly on all sides. Pour in the white wine, season with salt and pepper, cover, and let simmer for about 20 minutes until fully cooked and tender. Serve hot.
