This is a recipe for rose petal jam made with fragrant rose petals and sugar. It’s a special kind of rose — old-fashioned, pesticide-free roses known for their delicate fragrance and light pink color. These roses are not the typical decorative ones you see on postcards but a natural, fragrant variety perfect for making a unique and sweet rose petal jam. The process takes a few days to develop the perfect flavor and texture, resulting in a beautiful jam with the consistency of liquid honey.
Ingredients:
- 14 oz rose petals (fresh, large, light pink, pesticide-free)
- 2 cups granulated sugar
- About 1¼ cups water
- Juice of 1 lemon
Preparation:
- Separate the rose petals from the flower and remove any that look damaged or unhealthy. Rinse them gently and spread out to dry.
- Weigh the dry rose petals and use an equal amount of sugar.
- In a large jar, layer the rose petals and sprinkle sugar over them. Pour in the water. Cover and leave in a warm place for 4-5 days to allow fermentation to start.
- When the petals turn white and the mixture becomes frothy, pour everything into a large, heavy-bottomed pot.
- Cook gently over low heat, stirring often, until the mixture thickens to a syrupy, honey-like consistency.
- Add lemon juice and cook for another 10 minutes.
- Let cool and thicken further in the pot. It should have a thick, honey-like texture.
- Pour the cooled preserve into clean, dry jars and seal.
