Rice salad is a light, refreshing dish that’s perfect for warm days or quick meals. Made with fluffy rice, crisp radishes, savory marinated mushrooms, and fresh leek, this simple salad is full of texture and flavor. It’s easy to prepare, customizable with your favorite seasonings, and works great as a side dish or a healthy lunch.

Ingredients:

  • 1 lb (500 g) rice
  • 10.5 oz (300 g) marinated mushrooms
  • 5 oz (150 g) radishes
  • 3.5 oz (100 g) leek
  • Salt, black pepper
  • Apple cider vinegar
  • Oil (about 2–3 tbsp, or to taste)

Instructions:

  1. Cook the rice in salted water until tender.
  2. Drain it, then briefly rinse under cold running water. Let it drain well and cool completely.
  3. Slice the marinated mushrooms and radishes into thin pieces.
  4. Cut the leek into very thin strips.
  5. Combine the cooled rice, mushrooms, radishes, and leek in a bowl.
  6. Season with salt, black pepper, apple cider vinegar, and oil to taste.
  7. Mix well and serve chilled or at room temperature.
