Ingredients:
- 1 cup long-grain rice
- 2 cups almond milk (or any milk of choice)
- 1/4 cup maple syrup (or honey)
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cardamom
- 1/2 cup chopped dried figs
- 1/2 cup dried cherries
- 1/4 cup golden raisins
- 1 tsp vanilla extract
Method:
- Rinse the rice thoroughly and place it in a medium saucepan with 1 cup water. Bring to a boil over medium heat.
- Reduce heat and simmer for about 5 minutes, until the rice begins to soften.
- Gradually stir in the almond milk, maple syrup, nutmeg, cardamom, and vanilla.
- Chop the dried figs and cherries, and add them along with the golden raisins. Stir gently to combine.
- Continue to simmer over low heat, stirring occasionally, until the rice is tender and the mixture reaches a creamy consistency. Add more milk if needed to achieve desired thickness.
- Serve warm or chilled, garnished with a sprinkle of cinnamon or chopped nuts if desired.
