Ingredients:

  • 1 cup long-grain rice
  • 2 cups almond milk (or any milk of choice)
  • 1/4 cup maple syrup (or honey)
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cardamom
  • 1/2 cup chopped dried figs
  • 1/2 cup dried cherries
  • 1/4 cup golden raisins
  • 1 tsp vanilla extract

Method:

  1. Rinse the rice thoroughly and place it in a medium saucepan with 1 cup water. Bring to a boil over medium heat.
  2. Reduce heat and simmer for about 5 minutes, until the rice begins to soften.
  3. Gradually stir in the almond milk, maple syrup, nutmeg, cardamom, and vanilla.
  4. Chop the dried figs and cherries, and add them along with the golden raisins. Stir gently to combine.
  5. Continue to simmer over low heat, stirring occasionally, until the rice is tender and the mixture reaches a creamy consistency. Add more milk if needed to achieve desired thickness.
  6. Serve warm or chilled, garnished with a sprinkle of cinnamon or chopped nuts if desired.
