Ingredients (makes 12 muffins):
- 2 large eggs
- 2/3 cup plain Greek yogurt
- 1/4 cup melted unsalted butter
- 1/3 cup honey
- 1/2 tsp salt
- 1 tsp ground nutmeg
- 1 tsp lemon zest
- 1 tsp almond extract
- 1 1/2 cups whole-wheat flour
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 1 1/4 cups chopped fresh peaches
- 1/4 cup chopped pecans or walnuts (optional)
Instructions:
- Preheat oven to 400°F. Grease a 12-cup muffin tin or line with paper liners.
- In a medium bowl, whisk the eggs, Greek yogurt, melted butter, honey, salt, nutmeg, lemon zest, and almond extract until smooth.
- In another bowl, mix the whole-wheat flour, baking soda, and baking powder. Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the peaches and nuts if using.
- Divide the batter evenly among muffin cups, filling about 2/3 full.
- Bake for 20–25 minutes, until a toothpick inserted in the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack.
