Delight in these moist and flavorful Fresh Peach Muffins made with Greek yogurt, honey, and fresh peaches. Perfect for breakfast or a healthy snack, with a subtle hint of nutmeg and almond.

Ingredients (makes 12 muffins):

  • 2 large eggs
  • 2/3 cup plain Greek yogurt
  • 1/4 cup melted unsalted butter
  • 1/3 cup honey
  • 1/2 tsp salt
  • 1 tsp ground nutmeg
  • 1 tsp lemon zest
  • 1 tsp almond extract
  • 1 1/2 cups whole-wheat flour
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 1/4 cups chopped fresh peaches
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions:

  1. Preheat oven to 400°F. Grease a 12-cup muffin tin or line with paper liners.
  2. In a medium bowl, whisk the eggs, Greek yogurt, melted butter, honey, salt, nutmeg, lemon zest, and almond extract until smooth.
  3. In another bowl, mix the whole-wheat flour, baking soda, and baking powder. Gradually fold the dry ingredients into the wet mixture until just combined.
  4. Gently fold in the peaches and nuts if using.
  5. Divide the batter evenly among muffin cups, filling about 2/3 full.
  6. Bake for 20–25 minutes, until a toothpick inserted in the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack.
