Ingredients:
- 16 thin pie crusts
- 2–3 cups cooked rice
- 1 small onion, thinly sliced
- 2–3 tbsp oil
- Salt and pepper to taste
- Optional: chopped leeks or mushrooms
Instructions:
- Preheat the oven to 350°F. Grease a baking sheet lightly with oil.
- Boil the rice in salted water until tender.
- Sauté the onions (and optional mushrooms or leeks) in a little oil until soft. Mix them into the cooked rice and season with salt and pepper.
- Layer four pie crusts on top of each other, brushing each layer lightly with oil. Spread a portion of the rice mixture over the top. Roll the crusts gently and brush with a little more oil.
- Bake for about 30 minutes, or until golden brown. Serve warm.
