Ingredients:

  • 16 thin pie crusts
  • 2–3 cups cooked rice
  • 1 small onion, thinly sliced
  • 2–3 tbsp oil
  • Salt and pepper to taste
  • Optional: chopped leeks or mushrooms

Instructions:

  1. Preheat the oven to 350°F. Grease a baking sheet lightly with oil.
  2. Boil the rice in salted water until tender.
  3. Sauté the onions (and optional mushrooms or leeks) in a little oil until soft. Mix them into the cooked rice and season with salt and pepper.
  4. Layer four pie crusts on top of each other, brushing each layer lightly with oil. Spread a portion of the rice mixture over the top. Roll the crusts gently and brush with a little more oil.
  5. Bake for about 30 minutes, or until golden brown. Serve warm.
