A fun and easy baked snack that combines the flavors of pizza with flaky layers of pita bread. Perfect for lunch, parties, or a quick dinner.
Ingredients (Serves 4–6)
- 4–5 medium whole-wheat pita breads (8–10 inches)
- 2 large eggs
- 1/2 cup plain Greek yogurt
- 1/4 cup olive oil
- 1/3 cup whole-wheat flour
- 1 tsp baking powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 4 oz thinly sliced turkey or chicken breast
- 6 oz shredded mozzarella and provolone blend
- 2 tbsp sun-dried tomato paste
- 1 tsp dried basil and oregano mix
- 1 tbsp sesame or poppy seeds for topping
Directions
- Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.
- In a small bowl, whisk together eggs, yogurt, olive oil, flour, baking powder, smoked paprika, and salt until smooth.
- Lay one pita flat and brush it lightly with a thin layer of the yogurt-egg mixture. Place a second pita on top and repeat the brushing.
- On a third pita, spread the sun-dried tomato paste, sprinkle herbs, and layer the turkey/chicken slices along one edge. Top with shredded cheese. Roll tightly into a log.
- Repeat with remaining pitas and fillings. Arrange the rolls seam-side down in the baking dish.
- Brush the tops with any leftover egg-yogurt mixture and sprinkle seeds over the rolls. Bake 25–30 minutes, until golden and slightly crisp.
- Let cool 5 minutes, slice, and serve warm or at room temperature.
