Real Christmas honey cookies are my favorite.
I make them every year—they’re perfect for me, especially as they soften after a couple of days.
You can glaze them with chocolate; that’s what I do.

Ingredients for Real Christmas Honey Cookies:

  • 350 g all-purpose flour + 1/4 teaspoon baking powder
  • 200 g sugar
  • 100 g walnuts
  • 2 eggs
  • 150 g butter
  • 3 tablespoons honey
  • 3 tablespoons rum
  • Vanilla, lemon and orange zest, cinnamon, nutmeg

Preparation:

  1. Combine all the ingredients and knead into a dough.
  2. Leave the dough to rest overnight in the fridge.
  3. The next day, shape the dough into a log, similar to gnocchi preparation, and form small balls.
  4. Bake on parchment paper at a medium temperature until lightly golden.

Honey Cookies with Carrot

Ingredients for the Dough:

  • 150 g dried plums
  • 150 g dried figs
  • 100 ml rum
  • 120 g butter
  • 40 g honey
  • 3 egg yolks
  • 300 g sugar
  • 1/8 l water
  • Zest of half a lemon
  • 40 g apricot jam
  • 150 g ground walnuts
  • 150 g finely grated carrots
  • 500 g rye flour
  • 16 g baking soda

Ingredients for the Glaze:

  • 250 g sifted powdered sugar
  • Juice of one lemon
  • 2 tablespoons rum

Preparation:

  1. Soak the Dried Fruit:
    Mix dried plums and figs with rum and leave them to soak overnight.
  2. Prepare the Dough Base:
    Cream the butter with honey and egg yolks.
    Boil sugar with water and lemon zest, allowing it to simmer for 1 minute. Remove from heat and carefully combine with the butter mixture.
  3. Combine Ingredients:
    Chop the soaked plums and figs finely. Add them to the mixture along with the remaining ingredients. Mix well until you have a thick dough.
  4. Bake:
    Spread the dough evenly in a greased and floured baking pan (30 x 35 cm). Bake in the lower third of the oven.
    • Baking Temperature:
      • Top and bottom heat: 180°C (preheat the oven)
      • Hot air: 160°C (preheat the oven)
      • Gas: Level 3 (preheat the oven)
    • Baking Time: About 35 minutes.

  5. Mix all the glaze ingredients and spread over the warm cake. Once cooled, cut into desired shapes and serve.
