To make Raffaello Balls with White Chocolate, start by boiling 250g of sugar with 200ml of water. Remove it from the heat and, while stirring continuously, slowly add 200g of coconut flour. Then, add 300g of melted white chocolate and 100g of butter (melt the chocolate in the microwave beforehand). I have tried both combinations and decided to go with this one, but you can choose based on your preference.
Once mixed, place the mixture in the refrigerator for at least 1 hour. I usually leave it a little longer.
Shaping and Decorating Raffaello Balls
Now, shape the mixture into balls and place a hazelnut or almond in the center of each one. The nut adds a special, fantastic flavor to the balls.
To prepare the nuts, place the hazelnuts or almonds (with their skins on) in a dry baking tray and roast them in the oven. Keep an eye on them; they shouldn’t be dark brown when cut. Roast them just enough to turn a light brown color. Once done, remove them from the oven, and peel off the skins by placing them in a cloth and rubbing them between your hands.
An easier way to tell if the nuts are ready is by their smell. If they start to smell good, they are good to use.
Now, place a hazelnut or almond in each ball and roll the balls in coconut flour. Finally, place them in colorful paper cups. They taste best the next day.
