Ingredients:

9 oz ground veal or beef (or finely chopped)

1 cup chopped leafy greens (such as spinach or kale)

1/2 cup chopped celery

1 medium onion, finely chopped

1/2 leek, sliced

1 tablespoon olive oil

1 tablespoon rice (uncooked)

6 cups beef broth (warm)

1 bay leaf

1/4 teaspoon ground black pepper (or to taste)

1 tablespoon tomato paste

1/4 teaspoon ground allspice (or to taste)

2 tablespoons chopped fresh parsley (for garnish)

Preparation:
Heat a pan over medium heat and add the olive oil. Add the finely chopped onion and sauté briefly until slightly softened. Add the ground veal or beef and stir to brown lightly. Immediately add the grated leafy greens and celery. You may also add other finely chopped vegetables, but keep them in small pieces, not mashed. Cook everything for a few minutes, then stir in the rice and allspice. Add tomato paste and pour in the warm beef broth. Season with pepper and add the bay leaf. Simmer until the rice is tender, about 10 minutes after the stew starts to thicken. Remove the bay leaf and finish by stirring in fresh chopped parsley before serving.
