Ingredients:
- 1 medium onion
- 1 carrot
- 1 celery stalk
- 2 tbsp olive oil
- 2 cups tomato sauce (or crushed canned tomatoes)
- 2 cups water
- 2 cloves garlic (finely chopped)
- Fresh parsley (to taste)
- Fresh basil (optional)
- Salt & pepper to taste
Instructions:
- Blend or finely chop the onion, carrot, and celery.
- Heat olive oil in a pot over medium heat. Add the veggies and sauté for 3–5 minutes.
- Pour in tomato sauce and cook for another 5 minutes.
- Add water, stir well, and bring to a simmer.
- Cook for about 20 minutes total.
- Near the end, add garlic, parsley, and basil.
- Season with salt and pepper, then serve warm.
Tip: For a creamier version, add a splash of heavy cream at the end.
Quick Carrot Soup

Ingredients:
- 3–4 carrots (grated)
- 2 tbsp oil
- 4 cups water
- 1 cup breadcrumbs
- 1–2 tbsp sour cream
- Salt & seasoning (bouillon)
- Fresh parsley (chopped)
Instructions:
- Heat oil in a pot and sauté grated carrots for a few minutes.
- Gradually add a little water while cooking to soften them.
- Pour in the remaining water and bring to a boil.
- Add breadcrumbs, salt, and seasoning.
- Cook for about 15 minutes.
- Before serving, stir in sour cream and fresh parsley.
Tip: Add a pinch of ginger or turmeric for extra flavor and color.
