Pumpkin season calls for cozy flavors and indulgent textures, and this pumpkin cake hits that sweet spot perfectly. Moist, spiced, and creamy, it’s topped with a soft whipped layer and little crunchy surprises that make every bite fun. It’s easy enough for a weekday treat, yet special enough for holidays or gatherings. This version balances pumpkin’s natural richness with a creamy topping and a hint of caramel for extra warmth.
Ingredients
Cake Base
- 1 box yellow cake mix
- 1 (15 oz) can pumpkin puree (not pumpkin pie mix)
Soak & Cream Layer
- 1 (14 oz) can sweetened condensed milk (fat-free works too)
- 1 (8 oz) tub whipped topping
Topping & Garnish
- 1/2 bag (about 3.5 oz) toffee bits or Heath bits
- 1/4 cup caramel sauce
Instructions
- Preheat the oven to 350°F. Grease a 9×13-inch baking pan.
- In a large mixing bowl, combine the cake mix and pumpkin puree until smooth and well blended.
- Pour the batter into the prepared pan and bake according to the cake mix instructions, about 23–28 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool for 10 minutes in the pan.
- Use the handle of a wooden spoon to poke holes evenly across the top of the warm cake.
- Pour the sweetened condensed milk slowly over the cake, letting it soak into the holes for a moist, creamy texture. Refrigerate for 30 minutes to set.
- Spread the whipped topping evenly over the cake. Sprinkle the toffee or Heath bits on top, then drizzle caramel sauce lightly over the surface. Adjust the amount of caramel if you prefer a less sweet finish.
- Chill the cake for 3–4 hours or overnight for the best flavor and texture. Slice into squares and serve cold.
Baker’s Tip
For a little extra warmth, add 1 teaspoon cinnamon or pumpkin pie spice to the batter. You can also swap caramel sauce for chocolate drizzle for a different twist.
