Autumn is the perfect season for baking, and this apple pie with almonds captures the flavors of the season beautifully. With simple ingredients and a cozy aroma, it pairs wonderfully with a warm cup of tea.
Ingredients
For the Dough:
5 egg yolks
2 cups sugar (divided: 1 cup + 1 cup)
2 cups all-purpose flour
3 tablespoons rum
For the Filling:
10 medium apples
½ cup white wine
1 cup small raisins
2 cups chopped almonds
¾ – 1 cup sugar
½ cup chopped candied lemon and orange peel
Instructions
Beat the egg yolks with 1 cup sugar until pale and creamy. Add flour, remaining sugar, and rum, mixing until smooth. Roll out the dough to medium thickness and cut two circles. Place one circle on the bottom of the baking sheet and cut the other into strips for the top and edges.
Peel, core, and slice the apples. Place them in a saucepan with white wine. Add raisins, chopped almonds, and sugar. Simmer until apples are soft. Stir in the chopped candied citrus.
Spread the apple mixture over the dough base. Arrange the dough strips in a lattice pattern and seal the edges. Brush the top with a beaten egg and sprinkle sugar over it. Bake at 350°F (175°C) for 1.5 hours or until golden and fully cooked.
