This is a very easy and tasty baked potato dish. You can eat it warm or cold, as a side or a snack. Perfect for any time.

Ingredients:

  • Potatoes (as many as needed)
  • 1/4 cup oil
  • Salt, pepper
  • Cornmeal (or fine yellow corn flour), enough to make a thicker coating mix
  • 1/2 cup water (to pour in the baking dish)

Instructions:

  1. Wash the potatoes and cut them in half lengthwise.
  2. In a bowl, mix oil, salt, pepper and cornmeal to make a thick coating.
  3. Dip the rounded side of each potato half into the mix.
  4. Grease a baking dish and place the potato halves flat-side down, rounded side up with the coating.
  5. Pour about 1/2 cup of water around the potatoes.
  6. Bake at high temperature (about 425°F / 220°C) for about 25 minutes or until the cornmeal topping turns golden.

Tip: After baking, you can scoop out a bit of the center and fill it with sour cream, smoked meat, or chopped pickles.

Baker’s Potatoes

This is an old-style baked potato dish. It’s soft, full of flavor, and easy to make. Great with lunch or dinner.

Ingredients:

  • 5 ½ lbs potatoes (about 2.5 kg)
  • 2 lbs yellow onions (about 1 kg)
  • 1 cup vegetable oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 bay leaves
  • 1 teaspoon paprika
  • Fresh parsley, chopped (optional)

Instructions:

  1. Peel the potatoes and cut them into thin round slices.
  2. Slice the onions into strips.
  3. In a pan, lightly cook (sauté) the onions with oil and a bit of salt, pepper, paprika, and bay leaves until soft.
  4. In a greased baking dish, layer potatoes and onions one after another.
  5. Pour the rest of the oil over the top.
  6. Bake in the oven at 400°F (200°C) for about 40–50 minutes, until the top is golden and the potatoes are soft.
  7. Sprinkle with chopped parsley before serving, if desired.
